The Smooth Mango Lassi



I was trying to come up with something creative to do with our leftover mango. I decided to try a Mango Lassi, which is a traditional Indian drink, like a smoothie. I looked at several different recipes and took bits from each one to come up with the one below. It turned out very delicious! Most of the recipes don’t use ginger or lime juice, but I think they added a lot more flavor. If you’re making it for a party or just want to dress it up a bit, garnish each glass with a slice of lime. This recipe makes 2 drinks, so double it if you want more.

Ingredients

  • 1 mango, peeled and cubed
  • 1 8-oz. container non-fat, plain yogurt
  • 1 tbsp. honey
  • 2 tsp. fresh lime juice
  • 1 tsp. freshly minced ginger
  • 2 handfuls ice

Directions

  1. Add mango, yogurt, honey, lime juice, ginger, and ice to a blender. Mix until ice is blended and smooth. Enjoy!

You know I love mangoes, right? :) That looks really great! I have never heard of people adding ginger to lassis before.

Oh how you bring back memories of my days managing an Indian restaurant! I had to make this each day...I actually realized it was good as an ingredient in other dishes...
