Delicious Black Bean Salad



This creation is for one of my best college friends, Stacey. When we were in college, we used to get this delicious bean mix every day to go on top of our salads from the to-go section of our dining hall (bottom of Lenoir for all you Tarheels :). Ever since we started the food blog, Stacey has been asking me to try and recreate the bean salad. Here you go Stace! This is my first try at it & after tweaking some of the spices, I think it came out pretty close to the original! I thought about using Italian dressing instead of the olive oil & may try this next time. Best of all, it's only one step. If any of you have great recipes for black bean salad, let me know! I hope you like it Stacey :) Oh yeah, it gets even better if it sits in the fridge for a while! P.S. - I took this photo, so sorry if it doesn't look quite as great as Michael's pics do :)

Ingredients

  • 1 can black beans, drained
  • 1/2 can (15 oz) corn kernels, drained
  • 1 jalapeno, minced
  • 1 medium tomato, chopped
  • 2 scallions, chopped
  • 1/4 cup chopped cilantro
  • 1.5 tbsp. lime juice
  • 1 tbsp. olive oil
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

  1. Combine all ingredients in a medium bowl. Mix well. Add extra salt to taste, if needed.

Your salad is great! Black beans are, I believe, always a great way to make a salad. I also believe they are at their best when paired with jalapenos and cilantro.

Looks great to me! Ah dining hall days...the only 2 things I truely remember from the dining halls were the zucchini bread and the nights we got King Crab Legs!!! This sounds delicious, though :)

That looks as though it's got a really good kick to it! My dining hall didn't have anything close to this. I lived off of Subway sandwiches during my freshman year.

That's one of my favorite combos: I eat it as a salad: works well with chicken or beef and in wraps!
