Chicken Cherry Salad with Walnuts




I hope everyone had a nice Thanksgiving! It sure was hard for us to go back to work yesterday! First of all, I must give you a disclaimer about the below recipe. We did not have all of the ingredients that the original called for (found here). We quickly jotted down the ingredients one rushed Sunday afternoon and wrote 'endive lettuce', when turns out it called for 1 Belgian endive and frisée lettuce. It also called for roasted chicken breasts, to be seasoned with smoked salt. Well, we just cooked some chicken breasts on the grill pan and did not have this seasoned salt they spoke of, so omitted it. With that said, what is typed below is exactly how we made this. Have you all had endive lettuce? Yuck! We ended up just eating the chicken mixture and leaving the endive on the plate. The next night, we decided to use the leftovers in a wrap and to add feta cheese. Yum! I definitely recommend just mixing the top ingredients and serving it as a side or as a wrap. I may try adding the endive and smoked salt next time too... I was a little scared about the cherries b/c I'm not usually the biggest fan, but they were quite tasty!

Ingredients

  • 3 large grilled chicken breasts
  • 3/4 cup chopped walnuts, toasted
  • 1/2 cup dried cherries
  • 1/4 cup roasted walnut oil
  • 2 tablespoons balsamic vinegar
  • Black pepper to taste
  • 1 head endive lettuce

Directions

  1. Place chicken, walnuts and cherries in a large serving bowl.
  2. In a small bowl, whisk the walnut oil into the balsamic vinegar and season with black pepper. Pour the vinaigrette over the chicken mixture and toss well to coat.
  3. Serve over a bed of endive lettuce.

I got confused by the photo at first because my eyes read "chicken cherry salad" and my brain said "chicken cherry tomato salad". Glad the wrap was a success even if the salad was not entirely!

what a fantastic salad! sweet, tart cherries would be the perfect compliment to some chicken--i don't know why i haven't combined them before. incidentally, it's always hard for me to return to work. :)

This is a lovely salad. Endive lettuce is great for decorating platters but I don't live the way it tastes, so I'm with you on this one. True Belgian endive would add a lovely crunch factor to an already gorgeous salad and the slightly bitter frisee lettuce would balance the other flavors. Your photo is gorgeous.

Our company brought over a salad similar to this, and it was GREAT! I love most lettuce, bitter or not the contrast with fruit is what make it so wonderful...

Despite your experience with endive, the rest sounds good. It is a great mix with some crunch from the nuts and chewy from the dried cherries. I would love to make this.

The salad sounds delicious. I have some leftover chicken and feta is always found in my fridge. A few ingredients are missing but shall have to improvise.

Lovely salad, as for endive I like the bitterness. I love the addition of dried cherries and walnuts, nice texture and sweetness added to the salad.

This would make for an excellent wrap or sandwich! I bet dried cranberries would also go really well in place of the cherries. I don't think i've ever even seen smoked salt in stores so I would have to substitute as well.

I've never had endive. I almost never get whatever lettuce a recipe specifies, I usually get boring old green leaf lettuce.

Ha ha. Before I finished reading all the way through I was thinking this sounds good but what can I use instead of endive because yuck. Exactly. :) Too bitter. This salad looks beautiful though, and I would have done exactly what you did.

Had a salad similar to this in Traverse City Michigan last year. So nice to have the recipe 'cause I loved the salad. I'm crazy about dried cherries anyway- but they are especially good with chicken.
