Grilled Salmon with Creamy Horseradish Sauce



Happy Monday to everyone. We hope you've had a wonderful, relaxing weekend and are enjoying all the warm weather that this spring has blessed us with. We would also like to wish you a Happy Easter. If you do not celebrate Easter then happy spring! In Charlotte, NC we've been soaking up all this great patio weather before the mosquitoes get too bad. With great patio weather comes great grilling weather. Recently I've been on a smoke flavor kick. I find one of the best ways to really get a good smokey flavor is to use some cedar chips. You soak them for about 15-30 minutes while your brickets are heating up then dump 'em on the hot coals. Grill your salmon using a indirect grilling technique until it reaches your desired done-ness. The result is a really smokey grill that just plums into the salmon giving it a wonderful flavor. I get much better flavor with the chips than a plank. The other great part of using a indirect grill method it that you can cook a fish or meat for a really long time giving yourself more time to enjoy a great wine or ale outside. Now if we could only do something about that yellow cloud of pollen looming around. Oh yeah, the sauce—bottom line, is that it's great and could work on a variety of meats, not just salmon. As for the brush-on marinade, we did not think it added too much flavor but the cedar smoke could have overpowered it. Original recipe from epicurious.com

Ingredients

SAUCE:
  • 3/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 tablespoons horseradish
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon reduced-sodium soy sauce
FISH:
  • Cooking spray
  • 3 tablespoons vegetable oil
  • 1 tablespoon horseradish
  • 1 tablespoon reduced-sodium soy sauce
  • 1 small garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1.5 lb fresh salmon fillets

Directions

  1. Combine all ingredients for sauce in a small bowl. Mix well and refrigerate until the fish is ready.
  2. Whisk 3 tbsp vegetable oil, 1 tbsp horseradish, 1 tbsp soy sauce, garlic, salt and pepper in a small bowl. Brush over both sides of salmon fillets.
