When I was in Nashville last weekend, we went to a post-race cookout at my sister's boyfriend's house. They made this delicious mango salsa with chicken that I had to recreate once I got home. Thanks for the recipe Brooks/Hannah! The key to this yummy dinner is the salsa, so grill the chicken however you'd like. We marinated it in an Asian teriyaki-based sauce for about an hour before throwing it on the grill. We threw together a salad to go with it out of some lettuce, carrots, tomatoes, mushrooms, cilantro, goat cheese, and walnuts.
- 4 grilled chicken breasts
- 2 tbsp. fresh lime juice
- 1/2 a jalapeno, diced
- 1/4 cup fresh cilantro
- 1/4 cup red onion, diced
- 1 ripe mango, cubed
- 1 tbsp. brown sugar
- 1 can black beans, drained and rinsed
- Add lime juice, jalapeno, and cilantro to a food processor/blender and blend just until combined. Put mixture into a medium bowl.
- Add onion, mango, brown sugar, and beans to bowl. Mix well with a fork. Top each chicken breast with salsa and serve.
