Fire-Grilled Chicken with Black Bean Mango Salsa




When I was in Nashville last weekend, we went to a post-race cookout at my sister's boyfriend's house. They made this delicious mango salsa with chicken that I had to recreate once I got home. Thanks for the recipe Brooks/Hannah! The key to this yummy dinner is the salsa, so grill the chicken however you'd like. We marinated it in an Asian teriyaki-based sauce for about an hour before throwing it on the grill. We threw together a salad to go with it out of some lettuce, carrots, tomatoes, mushrooms, cilantro, goat cheese, and walnuts.

Ingredients

  • 4 grilled chicken breasts
  • 2 tbsp. fresh lime juice
  • 1/2 a jalapeno, diced
  • 1/4 cup fresh cilantro
  • 1/4 cup red onion, diced
  • 1 ripe mango, cubed
  • 1 tbsp. brown sugar
  • 1 can black beans, drained and rinsed

Directions

  1. Add lime juice, jalapeno, and cilantro to a food processor/blender and blend just until combined. Put mixture into a medium bowl.
  2. Add onion, mango, brown sugar, and beans to bowl. Mix well with a fork. Top each chicken breast with salsa and serve.

not only is this dish breathtakingly beautiful, but it also appeals to my taste buds very much. i wouldn't mind eating this every day of the week...for awhile, anyway. :)

That looks great! Love the idea of adding brown sugar.

I actually made mango salsa last night and the mango wasn't ripe enough: could have used the sugar :)

You can sub the cilantro in the salsa with the same amount of mint for a little twist in flavor... It is wonderful either way! Enjoy!
