Cheesy Meat Loaf Minis



Okay, you must try this recipe. Seriously amazing. I don't know that I've ever had meatloaf that I've liked, but this stuff is so delicious. Its relatively quick and easy to throw together too (maybe 45-50ish minutes total - 35 of which is cooking time). We served it with a side salad with blue cheese and sliced almonds. This personal-size version of meatloaf takes less time and doesn't leave you eating it for the remainder of the week. Roughly modified from Cooking Light.



Ingredients

  • 1/2 cup breadcrumbs 
  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • 2 garlic cloves, minced
  • 1/2 cup ketchup, divided
  • 3 ounces white cheddar cheese, diced
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon prepared horseradish
  • 1 teaspoon Worcestershire sauce 
  • 1 tablespoon Dijon mustard
  • 3/4 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/4 pounds ground beef sirloin (we used 10/90 fat/lean)
  • 1 large egg, lightly beaten

Directions

  1. Preheat oven to 425°.
  2. Heat a medium skillet over medium-high heat. Add breadcrumbs; cook 3 minutes or until toasted, stirring frequently. Remove breadcrumbs from pan and set aside.
  3. Put olive oil into same skillet. Add onion and garlic; sauté 3 minutes. 
  4. Combine onion mixture, breadcrumbs, 1/4 cup ketchup, cheddar cheese, cilantro, parmesan cheese, horseradish, Worcestershire, mustard, oregano, salt, pepper, sirloin and egg. Mix well with hands.
  5. Shape mixture into 4 loaves on a broiler pan coated with cooking spray; spread 2 teaspoons ketchup over each. 
  6. Bake at 425° for 30-35 minutes or until done.

I have leaned away (a pun in there lol) from eating meat of this kind, but now wish it was in front of me! Tomatoes go on anything in my book...that popped into my head from see the photo! Love meatloaf because of the sauce on top! yours is perfectly cooked too!

I actually really love meatloaf... and this sounds like a great version! I've never added cheese to mine, but that could only improve it. And I love the mini form.

I've never made/eaten meat loaf - it just sounds so unappealing...a loaf of meat...yuck.
But you might've just changed my mind. I love all the yummy stuff that goes in it and that it's 4 individual servings. Good job : )
