Seared Tuna with Stir Fry and Couscous... oh, and one engagement!

Surprise! It's official, we're gettin' hitched! Despite the forecast of all-day thunderstorms, Michael and I decided to chance it and continue with our plan to hike at Crowders Mtn. yesterday. We packed a little lunch and were on our way. After about an hour, we made it to the peak of the mtn. (it's a little one :). Michael asked if I wanted to have lunch up there. "Nah, I'm not that hungry yet" So then he asked if we could just sit for a bit. Then he started talking about how much he loved me and lots more (we both forget what all he said). Then all of the sudden, he had this little red box & I just kept saying "are you serious?!" He got down on one knee and everything (well, as much as he could on the rocky surface). I kept saying "thank you so much!" but forgot to say yes. He eventually was like, "does that mean you'll marry me?" I was like "did I not say that already??" and he said "no you didn't!" Then I said "Shoot, sorry! Of course I'll marry you!"

He considered baking a cake and then cutting out a hole and hiding the ring box in there, but I think the way he did it was just perfect. We thought about going out to eat to celebrate but both decided we'd rather cook some fish and drink some champagne at Michael's house. This tuna was delicious! Michael just threw together some spices and seared it on a grill pan. We stir-fried some shiitake mushrooms, snap peas, yellow pepper, cherry tomatoes, green onions and garlic for a side. We also served it with some couscous.

Ingredients

  • 2 1/2 lb. tuna fillets
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1 tsp. pepper
  • 1 1/2 tsp. thyme

Directions

  1. Mix salt, paprika, pepper, and thyme in a shallow dish.
  2. Coat all sides of tuna with rub.
  3. Cook in a cooking-spray prepared grill pan over medium-high head, just enough to cook edges- about 2 minutes per side
